  • 1 cup wild rice (dry)
  • 3 cups vegetable broth (no sugar added)
  • 15 oz. can pinto beans (no sugar added or use homemade instead)
  • 1 cup chopped tomatoes
  • 1/2 cup chopped red onion
  • 1 tbsp. ground cumin
  • 1 tbsp. chili powder
  • 2 tsp. garlic powder
  • 2 tsp. onion powder (yes, in addition to the onion - although you can leave this out and taste it before you add it)
  • 1 dash salt (to taste)

  1. Combine the dry rice and vegetable broth in a large pot and bring to a boil. Reduce to a simmer and cook for about 1 hour.

  2. Allow to cool for about 1 hour, stirring occasionally to release the heat.

  3. Stir in all other ingredients and serve.
