(cooked and cut open)

hummus

lentil soup
(drain off a bit of the broth if it's very brothy soup)

parsley
(fresh, chopped - optional)

Instructions
Bake your sweet potato as you normally would, either in the oven or in the microwave. Cut it open like you would a baked potato.
Spoon on the hummus.
Ladle on the lentil soup. As mentioned, try to avoid too much liquid.
Garnish with fresh parsley if desired.
Serve.
