  • 2 cups spring mix lettuce (tightly packed for measuring)
  • 1 large hard boiled egg (sliced)
  • 1/4 medium avocado (chopped)
  • 1/2 medium tomato (chopped)
  • 1/4 small red onion (chopped)
  • 2 cups cooked chicken (chopped or shredded)

  1. If you are particular about your presentation, simply place the salad in a bowl and then add the toppings on in rows as picture above. If not, simply place all ingredients in a large mixing bowl, add your desired dressing, and toss, then serve.
