Ingredients

  • 1 1/2 lb. ground turkey
  • 1 tbsp. olive oil
  • 30 oz. tomato sauce (I used canned with no sugar added)
  • 1 lb. green peas (OR 1 cup shredded carrots)
  • 1 cup red onion (chopped for measuring)
  • 1 tbsp. garlic powder
  • 1 tbsp. curry powder
  • 15 oz. light coconut milk (canned)

Instructions

  1. In a medium to large soup pot, brown the turkey in the olive oil.

  2. Once the meat is browned, add in all other ingredients and simmer until the meat is fully cooked.
