  • 1/2 medium yellow onion (finely chopped)
  • 4 medium garlic cloves (minced)
  • 2 tbsp. oil
  • 1 lb. fresh asparagus (chopped)
  • 1 lb. frozen, medium, pre-cooked shrimp (thawed)
  • 1 small bunch fresh parsley
  • 1/2 medium lemon
  • salt and pepper to taste

  1. In a large skillet, saut√© the onions and garlic in the oil until the onions are translucent.

  2. Toss in the asparagus and cook until it begins to soften

  3. Add the pre-cooked shrimp and cook just long enough to warm them to your liking.

  4. Turn off the heat, squeeze the lemon over the shrimp and toss in the parsley.

  5. Stir and serve.
