Ingredients

  • 2 cups chopped pumpkin
  • 1/4 small yellow onion
  • 1 lb. ground turkey
  • 1 tbsp. ground cumin
  • 1 tsp. ground cinnamon
  • 1/4 tsp. allspice
  • 2 tbsp. coconut oil + more as needed OR chicken broth for lower fat content

Instructions

  1. In a large skillet, warm the oil (or chicken broth) and add the pumpkin. Cook, stirring occasionally, for about 3 -4 minutes.

  2. Stir in the onion and ground turkey.

  3. Add the cumin, cinnamon and allspice and stir frequently until the turkey is fully cooked through.

  4. Season with salt to taste.

  5. Serve over cooked rice or pasta if desired.
