As I move along in this weight loss struggle with all it’s “ups and downs”, I’m starting to see that carbs play a huge role in weight loss.
I always envision pumpkin flavored anything as a fall or winter thing. After all, that’s when you’re supposed to buy pumpkins, right?
This recipe came from a desperate attempt to feed Mini Chef one morning when I just had a small amount of produce and some eggs to get creative with.
Cranberries are an exceptional food. But the flavor is not the only wonderful thing about these little red berries.

If you are new to clean eating, grocery shopping can seem like a really intimidating undertaking. I remember the first time I tried to shop clean. It wasn’t pretty. In fact, I believe I made several follow up trips that same day to return many of the items I purchased on my first round of my label reading frenzy. They were not happy with me at the return counter.
So the other day, Mini Chef was being rather insistent about baking some cookies. He might eat clean, but he’s got his Mama’s sweet tooth. And while I try to temper that with plenty of veggies, whole grains and lean meats, there’s just no denying he’s my kid when he gets his mind set on a treat. So I finally relented. These are seriously good! Proceed with caution!
