Clean Eating Slow Cooker Creole Chicken Stew

By cooking real food for my kids, using whole ingredients, without artificial flavors and preservatives, I’ve been cleaning up our family’s diet one bite at a time over the years, swapping healthy, whole ingredients, for processed ones, and adapting recipes to make them gluten-free for my son who has some food intolerances.

As part of our journey to healthier eating, I introduced my family to a wider variety of fresh produce by joining a CSA (“Community Supported Agriculture”) and shopping at the local farmer’s market. They got to taste and appreciate what real food is supposed to taste like.

In addition, I learned how to cook different types of cuisine, including Chinese, Thai, Korean, Vietnamese, Italian, Cajun, Indian and Jamaican dishes. I found the more flavors and spices my kids were exposed to, the more adventurous they became and the more willing they were to try new foods. So, I mix things up throughout the week to try to keep mealtime exciting. I love it when my kids ask “What’s for dinner?”

Sometimes you might find me sneaking healthy ingredients like whole grains and vegetables into my recipes to make sure my kids are getting the biggest bang for the buck in their meals.

This Slow Cooker Creole Chicken Stew is a meal I made recently on a Sunday afternoon while my family watched football and I tried to catch up on household chores and run a few errands. It’s a no-fuss meal, packed with vegetables that makes a big batch so you can freeze some or repurpose the leftovers in a variety of ways (something I’ve gotten very good at lately). Served with a green salad and steamed brown rice or quinoa, it makes a cozy fall meal.

RECIPE NOTES:

Freeze extras or use leftovers to stuff baked sweet potatoes, tacos or quesadillas. Save the flavorful sauce and cook beans in it for another meal.

Slow Cooker Creole Chicken Stew

Ingredients

  • 2 tbsp. olive oil
  • 2 cups onion (chopped)
  • 2 cups celery (chopped)
  • 2 cups green bell pepper (chopped)
  • 6 medium garlic cloves (chopped)
  • 1 (6 oz.) can organic tomato paste
  • 2 (15 oz.) cans organic chopped tomatoes
  • 1 cup low sodium chicken broth
  • 2 tsp. Cajun seasoning
  • ¼ tsp. ground black pepper
  • 2 medium bay leaves
  • 1 tsp. dried thyme
  • 3 lbs. skinless, boneless chicken thighs
  • fresh chopped parsley and scallions (for garnish)
  • hot sauce (optional)

Instructions

  • Heat oil in a large skillet and add onion, celery, bell pepper, and garlic; sauté on medium heat 5-7 minutes, until fragrant.
  • Add tomato paste and mix into vegetables; cook 2 minutes.
  • Spoon vegetables into slow cooker.
  • Add chopped tomatoes, chicken broth, Cajun seasoning, pepper, bay leaves and thyme.
  • Stir ingredients together to mix well.
  • Submerge chicken thighs in sauce.
  • Cover and cook on low for 4 hours.

    This looks like dinner tonight!!! I follow the Weight Watcher plan, so I’m unsure about serving size for this one. Do you know the approximate serving size? I see that it yields 8 servings, but not sure about the serving size 🙂

  5. This recipe looked delicious so I made it yesterday. It was easy but I thought it was a little bland. However, I put Tessemae’s hot sauce on the chicken and it was delicious! Next time I will add the hot sauce to the slow cooker towards the end of the cooking time. The sauce was delicious with corn bread as well. For a second meal, I shredded the chicken and threw it on top of salad greens with tomatoes, black beans, corn and a cilantro dressing (and more hot sauce) and that was fantastic. Thanks for the recipe!

  7. Made this one for my family (we are doing the 21 day fix). Fits that plan nicely and was very easy to prepare. We are from Louisiana and I can attest to this one has an authentic creole taste.

  8. only 4 hours on low? Other chicken crock pot recipes I have tried have been at least 6 hours on low.. I am making thins today.. can anyone tell me if they found the cooking time to be accurate?

      Rachael – Every crock pot is different. If yours needs 6 hours, then that’s what you should cook it for. Your best bet is to check with a food thermometer.

  9. Can I substitute Creole seasoning for Cajun seasoning, it seems they would have similar tastes? And it is called “Creole chicken” lol
