Pizzadillas Recipe

This pizzadillas recipe is quick, simple and totally delicious. Perfect for breakfast, lunch or dinner!

I firmly believe that every Mom (or Dad) needs to have at least one meal in her cooking arsenal that is not only fast to make for those busy week nights, but is also healthy. And, oh ya… the kids have to LOVE it.

Clean Eating Pizzadillas Recipe

You know what I’m talking about. That one meal that you KNOW your kids will eat no matter what, and you don’t feel guilty giving it to them. Even if you give it to them a few nights a week. That one meal that is so easy to put together, that you could practically do it in your sleep.

This is my “go-to” secret weapon when dinner has to be done in 15 minutes including prep time, and I want my son to get his veggies for the night. He gobbles it down in no time, and I can whisk him off to bed. Then I can settle in for an evening of my own dinner and whatever show I can catch on TV before I pass out from sheer exhaustion.

WHAT IS A PIZZADILLA?

Simply put, it’s a cross between a pizza and a quesadilla! It’s very simple pizza toppings with cheese melted in the oven, folded in half and cut like a quesadilla. It’s delicious!

What You’ll Need

1 standard whole wheat tortilla

¼ cup plain tomato sauce (or your child’s favorite spaghetti sauce)

¼ cup zucchini (or other favorite veggies)

¼ cup grated cheddar cheese (mozzarella also works well)

How To Make This Pizzadillas Recipe

Preheat oven to 350 degrees F.

Place your tortilla on a parchment lined cookie sheet.

Layer ingredients in order listed.

Place in oven for 10 minutes.

Fold in half, cut, cool and serve.

Recipe Tip: Especially for younger kids, keep the layers thin. Not only will it be easier for their little fingers to manage, but it will also cool down faster which is great, because young, hungry kids are never patient when they're hungry.

      Michelle – it is! Enjoy!

  2. Hey, tips for veggies? I have some very picky veggie eaters, but I’m thinking if I chop them up really small they won’t realize!! They always inspect their food, so I have to be sneaky!! I also need something that doesn’t have a lot of taste to it!!

    1. The Gracious Pantry says:

Amy – Peel a zucchini and then shred it fine. It will blend in with the cheese and won’t add any real flavor. Enjoy!

  3. I’m going to have to try this myself! Maybe I’ll let my son taste it too, if I don’t eat it all. I tried a wheat tortilla today, I was so skeptical about it… But it was actually good!!

Julie – Yes, they’re not bad at all! I’m glad you liked it!

  6. Do you think whole wheat pita bread would work the same as the whole wheat tortilla?

    1. The Gracious Pantry says:

Jennifer – It won’t fold in half like a tortilla will, but you can just use it like a pizza crust. You don’t have to fold it over. Just load up on toppings and pop it in the oven. Instant pizza!

  7. This will be my lunch! What do you suggest for a clean tomato sauce?

    1. The Gracious Pantry says:

Desiree – I you want to make it, I have a couple recipe here. But if you want to buy it, Eden Organics has a good, clean pizza sauce in a can. Otherwise, just pick up a jar of marinara (that’s what I use). Rao’s is clean.

  8. Mackenzie says:

Hi! I really liked this recipe but the tomato sauce was a little too runny and messy for my family. Is it supposed to be like that or would there be a way you would suggest to make it less runny?

    1. The Gracious Pantry says:

Mackenzie – It’s possible we maybe have different sized tortillas and the amount of sauce is too much for yours if they are smaller. It’s also possible that your sauce is more watery than what I used. You can adjust any of the ingredients any way you like. I would just cut the tomato sauce in half and see how that works for you. Hope that helps!

  9. My stove is out. So anything oven cooked is not a possibility at the moment. Any clean recipes that don’t involve the oven for dinner? Running out of options. TIA Laura

Laura – This particular recipe will work well on the stovetop as well, or even in a microwave. What appliances do you have available to you?
