Clean Eating Coconut Banana Smoothie

Yes, this is higher in fat than most of my smoothies. But all the fat comes from the coconut, which in my book, makes it healthy. I love coconut fats!

However, if the fat content is really a concern for you, simply change the coconut milk to any other type of milk for a yummy banana smoothie with a hint of coconut. Delish either way!

It’s refreshing, filling, and full of good-for-you nutrients. You can’t go wrong!

  • 2 tbsp. dried coconut (unsweetened)
  • 2 tbsp. chia seeds
  • 2 scoops protein powder (plain for vanilla)
  • 1 cup raw spinach leaves (optional for green smoothie)

Instructions

  • Blend and serve.

  1. How do you cook Quinoa? I don’t even know what it is… I assume it’s a grain?

      Annie – It’s really easy. Quicker than cooking rice. I recommend rinsing it with warm water, then following the package directions. I believe it’s technically a seed, but it’s treated as a grain. It has a unique and understated flavor. I think you’ll enjoy it. We sure do!

    Ya, spinach is great in smoothies. I have never once gotten a spinach flavor. It’s a great way to get those extra nutrients!

  5. Just curious if you used the canned light coconut milk or the coconut milk in the carton, similar to almond milk.

      Jodi – The stuff in the refrigerator is not clean. They add sugar and other ingredients. You want the canned stuff, but even then, read the ingredient list. It should be only two to three ingredients tops.
