I’m a sucker for a good salad. There’s just something fulfilling about all that crunch. I feel like I’ve done a good job when I’m done. Is that weird? Probably. But that’s me. My food is a full body experience at each and every meal. It is what it is! Thankfully, this clean eating autumn cabbage salad recipe was a very good experience.

Recently, a Facebook follower pleaded with me to create an autumn-inspired recipe using apples. She was tired of seeing all the pumpkin and pumpkin spice recipes and really wanted to see something with apples.

Well, I’m not one to turn down a request if I can help it. Especially an emotional cry for help in the recipe department! So I took a good long look at what I had in my fridge and realized I also had a couple apples on my tree in my yard. So my inspiration for this clean eating autumn cabbage salad recipe was born.

All of these wonderful ingredients came together to create a hearty party in my mouth. It was amazing, and I hope you’ll think so too. It was a great blend of sweet and savory and was just one of the most wonderful lunches I’ve had in a while.

Clean Eating Autumn Cabbage Salad Recipe With Dressing

As a side note, I used canned chicken because that’s what I had on hand. You can use any type of chicken you have available to you. Also, before anybody freaks out about the fat content, the fat comes from a healthy oil, pecans and the chicken. Feel free to cut back on any of those to cut back on fat intake. You don’t have to use all the dressing, but I had to include all of it for the nutrition data. So that aspect of this recipe is really variable.

Autumn Cabbage Chicken Salad Recipe

Ingredients

SALAD

  • 10 oz. shredded green cabbage (I purchased mine already shredded)
  • 1 ½ cups shredded chicken
  • ¼ cup chopped pecans
  • ½ medium apple chopped

DRESSING

  • ¼ cup oil
  • ¼ cup apple cider vinegar
  • 1 tbsp. caraway seeds
  • 1 tsp. onion powder
  • ¼ tsp. salt

Instructions

SALAD

  • Combine all the salad ingredients in your bowl and set aside.

DRESSING

  • In your blender, blend together all the dressing ingredients for about 2 minutes.
  • Pour the dressing over the salad and serve.

  1. just want to confirm, for a serving (1/2 the recipe), the calorie content is 595?
    I am a bit surprised.
    If the recipe makes 2 servings and the nutrition fact table says per serving, then that would be 1/2 the entire recipe, not the entire recipe which I have a feeling is 595 calories. Please clarify.

      Jennifer – The data reflects the nutrition per serving. However, as I mentioned in the notes, I had to include all the dressing. Most folks won’t use it all.

  2. Sounds good! What type of apples would work best in this(granny smith, mac ntosh etc) Also would almonds be good in this or do pecans work better?

      Anne – I would just ask the produce person at the store what is currently the sweetest apple and go with that. I think either nut would work here, so pick your favorite! 🙂
