Baking chicken bread can be a tasty way to add protein to your diet. Especially if you eat low-carb or keto. But it’s tasty bread for anyone to enjoy!
I’ve been watching my carbs lately and really missed making a decent sandwich. My search for good low-carb bread has been ongoing for some time. So when this popped up, I had to give it a try.
I saw this on TikTok but the creator (@crystalc.fit) didn’t give any measurements in her video. So I put my own spin on it, made up the measurements according to what I thought would work well, and gave it a try.
The truth is, you can use either ground chicken or ground turkey. Either will do. The turkey tends to give it a “meatier” flavor, but it’s actually quite tasty. This is a great bread for anybody watching their carb intake like me. It’s quick, easy, and full of protein. You can make it leaner by using lean meat, or you can make it fattier for a keto diet by using higher-fat meat. Either way, this delicious bread is sure to please.
What Is Chicken Bread?
Traditional chicken bread is an entirely different beast than what you’ll get here. Typically, making chicken bread involves a chicken filling, usually made of shredded chicken thighs or shredded chicken breast, and includes parmesan cheese, and/or mozzarella cheese, and even some plain flour or all-purpose flour. It is a stuffed bread (or french bread) made with instant yeast and warm water that often has slits cut into the top or is sometimes turned into a braid and topped with sesame seeds. It can also include ingredients such as green chilies, onion, and milk powder. Most people brush on an egg wash to top it off. It is then baked in the oven, cooled, and sliced with a knife for several people to enjoy. I’ve even seen it served with dipping sauce.
That’s not what this recipe is. This chicken bread is very, very different.
What Does Chicken Bread Taste Like?
By itself, there is a slight taste of egg. And you do get a gentle note of the Italian seasoning. But with toppings on it, you can’t taste the eggy part. The flavor gets lost in whatever you put on the bread. It’s actually great for making meat-based sandwiches, such as turkey sandwiches.
What Texture Does Chicken Bread Have?
It’s similar to a spongecake in consistency. It holds together well and makes a great sandwich. This bread does not have a crust in the traditional sense. So it’s great for those who hate bread crusts!

It’s an easy, low-carb bread that holds up well for sandwiches. It won’t get soggy like other bread, so you can easily spread condiments on it in the morning to make a sandwich that you won’t eat until lunchtime.
A Word About Salt
While it may be tempting to add salt to this recipe, I highly recommend you avoid adding any salt until you have made this at least once and verified that there is not enough salt in it for your tastes. The baking soda in this adds plenty of salt, in my opinion.
Recipe Variations
- Ground Turkey – You can use ground turkey for this recipe if you prefer it. But chicken works better for overall flavor.
- Green chilies – This can be added with the spices.
- Chopped onion – It’s best if you sauté these in the turkey while you cook it.
- Chopped garlic – Add this in the last minute or so of cooking the turkey.
- Black pepper – This can be added with the spices.
- Chili powder
- Cumin
- Parsley

Ground chicken – cooked without spices.
Oil – Any light-flavored oil you prefer to use.
Large eggs – These can be used cold, but room temperature works better.
Baking powder – Use newer powder so it’s at full strength for this recipe.
Baking soda – Use newer powder so it’s at full strength for this recipe.
Italian seasoning – or any seasoning you want to flavor the bread with.
How To Make Chicken Bread
Oil a standard loaf pan.
Cook the ground chicken in the oil until it’s fully cooked. Let it cool enough to not cook the raw egg.
Place all ingredients into a blender, and blend until very smooth then pour the batter into an oiled, standard loaf pan. Bake at 350 for 45-50 minutes.
Cutting Chicken Bread
Let it fully cool, then cut the loaf in half.
Then turn each half on its end, and slice it into thirds.
How To Store Chicken Bread
This can be kept in the fridge for up to 3 days. Wrap it well to keep it from drying out.
Can I Freeze Chicken Bread?
Absolutely! It freezes quite well for up to 6 months if wrapped well to avoid freezer burn.

Ingredients
- 1 lb. ground chicken (cooked plain, no spices)
- 2 tbsp. oil
- 6 large eggs
- 1 tsp. baking powder
- 1 tsp. baking soda
- 2 tbsp. Italian seasoning (or any seasoning you prefer for flavor)
Instructions
- Oil a standard loaf pan and set aside.
- Cook the ground chicken in the oil until it's fully cooked. Let it cool enough to not cook the raw egg.
- Place all ingredients into blender, and blend until very smooth.
- Transfer the batter to the loaf pan and bake at 350 for 45-50 minutes.

- Let it fully cool, then cut the loaf in half.
- Then turn each half on its end, and slice it into thirds.
