		<description><![CDATA[The thing I like about white roughy is that it's a very forgiving fish. You can season it with just about anything because it's very mild flavored. You can also cook it until it's just shy of charcoal, and it will still have a nice texture. (This is good for me because I'm paranoid about undercooked meats of any kind. So I tend to cook all meat until you could take somebody's eye out with it.)]]></description>
