A while back, a reader emailed me and asked if I could redo a recipe for her. She had eaten a tuna wrap that she really enjoyed, but then read the ingredients and realized it was not clean. So she emailed and asked if I could "clean it up" for her. Not being one to turn down a clean, culinary challenge, I got to work.
What I came up with is a tuna salad that is tasty, mild and enjoyable in several different ways.

Of all the things I sorely miss, it's ranch dressing. I mean, there's just NOTHING you can't put it on. I even tried it on vanilla ice cream once, and it wasn't half bad.... I might not pour it over vanilla ice cream ever again, but you can bet I'll be pouring it on a lot of other things in the near future. Here's the recipe.

The thing I like about white roughy is that it's a very forgiving fish. You can season it with just about anything because it's very mild flavored. You can also cook it until it's just shy of charcoal, and it will still have a nice texture. (This is good for me because I'm paranoid about undercooked meats of any kind. So I tend to cook all meat until you could take somebody's eye out with it.)

This is a recipe my mom made for me years ago. I was so impressed with it, I've been making it ever since. There's just something about a caramelized carrot that gets me salivating. The full bodied flavor induces a fabulously tasty explosion in your mouth. Add a little dill and... man oh man, is it ever good!
