I looked at many, many Jambalaya recipes before I finally formulated this one. What I found was that everyone and their mother has their own version of this dish. There really is no "typical" way of making Jambalaya. It's one of those "one-pot-wonders" that seems to turn out great no matter what you throw into it.

What I also found out, was that most people who eat Jambalaya or grew up with it, have a very strong opinion about how it should be prepared. If it's not made the way they are used to, then it's just not good Jambalaya.

There's just something about nachos that resonates with my soul. The salty crunchiness of the chips paired with zesty, seductive chili makes my spine tingle every time. And far be it from me forego any spine-tingling experiences around here, so I just HAD to come up with a clean eating recipe for this!

I love pumpkins. Everything about them is fabulous. I love them in all shapes, colors and sizes. I'm and equal opportunity pumpkin lover. No pumpkin is to big, warty or strangely shaped for me. I just love em'! I actually have TWO pumpkin recipes for you today!! Can you stand it?!
If you can't decide which one to make, do what I did. Divide the recipes in half and make both!

I've been wanting to come up with my own clean eating taco seasoning for a long time now. The sad fact is, most of the packaged stuff you buy has either sugar, maltodextrin or MSG in it. Not exactly what I want to put in my body, thank you.
