Many moons ago, a reader sent me a recipe for these cabbage rolls. I had never made cabbage rolls or even eaten them before so I thought it would be something fun to try. But I kept putting it off for reasons unknown. So glad I finally made them!

I'm not a complicated cook. If a recipe is overly fancy or requires exotic ingredients, it immediately gets filed in the "round file" (garbage). I just do not have the patients to learn 10 Ways to Wield My Butane Torch in the Kitchen or what exactly happens to taste, flavor, color, texture and consistency when you flambé foods. Not that these types of techniques and information are a bad thing, I just don't have time for them!

I love this recipe for it's simplicity. It's a wonderfully complete meal that's light in the tummy (I hate it when I feel like I just ate a brick!), and comes together fast. In my humble opinion, it's a fantastic weeknight meal.

The people I've met through the blogging world are the most amazing and courageous people. They are my heros. The people I aspire to be like. The people who have been where I'm at, and have beaten bad health down with a baseball bat. The people who glow with vivacity, kindness and an inner strength that is not easily come by. One such woman is Erin. Erin was gracious enough to share this amazing recipe with me to post here. Not only is it fantastically clean, but also a perfectly balanced and healthy meal. To say these are tasty is an understatement!

From the time I could eat solids, my Grandmother and Mom have made this soup for me. It's a World War II recipe my grandmother brought with her when she, my mom and my uncle immigrated here in 1951. It's a good, tummy warming soup for a cold winter night.

I love the name of this dish. Bubble an Squeak. Sounds almost more like a cleaning product than a meal, but I love the name just the same.

It doesn't look like much either, even by reading the recipe. But this dish packs a really flavorful punch! In fact, this was my first time making it, and I was absolutely amazed at how flavorful this dish was.
