Clean Eating Pumpkin

Funny.

I feature an “ingredient of the month”, but I forget to do it every month!

Oh well. We’ll chock it up to motherhood, being a full-time student and having way too many recipes to test drive!

Anyhoo, I chose pumpkin as the ingredient of the month because…. well…. it’s October. (Bet you never saw that one coming.)But the main reason I chose pumpkin is that this is the best time of the year to really stock up on this fabulous super food!

I’ve been working on a post on the 50 Super Foods You Want To Include In Your Clean Eating Diet (coming soon). Pumpkin was definitely on the list! Here’s why:

Pumpkin is rich in Beta carotene, potassium, iron, lutein, zeaxanthin, zinc and it really high in fiber. It fights prostate cancer, helps with gall bladder problems, is an anti-inflammatory (which is great for arthritis) and does wonderful things for your skin. It also helps prevent cataracts. And did I mention it’s wonderfully low in calories?

So if all that doesn’t convince you to eat your pumpkin pie this holiday season, let me show you a few other ways to enjoy this super food.
