White Lasagna Recipe

This white lasagna recipe is, hands down, my new favorite lasagna recipe.

I’m not entirely sure what gave me the idea for this one. All I know is that I suddenly wanted lasagna, I knew I wanted to try it with cottage cheese, and the rest just unfolded based on what I had in my fridge. It was a very simple recipe (in my opinion), and I didn’t expect much from it, to be honest.

But wow. Even Mini Chef went back for seconds, and these days, that’s a serious compliment. I felt like doing the snoopy dance while he was out of the room.

Clean Eating White Lasagna Recipe

A delicious lasagna without the red sauce!

Ingredients

  • 10 oz. package brown rice lasagna noodles (or whole wheat)
  • 1 tbsp. olive oil
  • 1 ¼ lbs. lean ground turkey
  • 1 cup chopped white onion
  • 1 tbsp. garlic powder
  • 32 oz. cottage cheese
  • 1 ½ cups grated parmesan cheese
  • 1 large head broccoli (finely shredded or chopped)

Instructions

  • Set the noodles to boil as per package directions.
  • In a large skillet, cook the turkey, onions and garlic powder in the olive oil
  • When the noodles are finished, preheat the oven to 350 F.
  • Now line a baking dish with the first layer of noodles.
  • Then 1/2 the meat mixture, then 1/2 the broccoli, then 1 container of cottage cheese, then 1/2 cup parmesan, and then another layer of noodle.
  • Repeat this layering process again and finish with noodles on top, sprinkled with the last 1/2 cup of parmesan
  • Place in oven and cover loosely with aluminum foil.
  • Bake for approximately 40-50 minutes, or until you can see the juices bubbling.
  • Note that there may be a bit of liquid at the bottom of the dish when serving. This is normal
  • When finished, cut into 12 equal portions.
  • Allow to cool for 30 minutes, then serve
  •  Top with a little extra parmesan cheese if desired.

  1. This may be a silly question, but how do you shred your broccoli? Do you just use a regular box grater?

      You can, but I used the grater that came with my food processor. I just push it through and it does all the hard work for me. 🙂

  5. what do you think would work instead of the cottage cheese? I have a dairy allergy but this looks amazing, for some reason I can tolerate goat cheese though…

      You could try it with goat cheese, but I have no idea what that would taste like. Not sure turkey and goat cheese go all that well together, but then I’ve never been a fan of goat cheese. So maybe it’s just me…

  6. I just wanted to let you know this recipe changed my life! I had to make a few substitutes due to a lack of ingredients in my fridge (end of the week, I do my grocery shopping on Saturday nights), so this is what I did: I didn’t have enough broccoli, so I used the rest of my kale with the broccoli and chopped it up fine. I sautéed it for a minute in a sauce pan to shrink it down a bit. I only had half an onion, so I added the last leek in my fridge with it. I had half the amount of cottage cheese, so just went with it. It turned out phenomenal, and my dude loved it!!! He even ate the leftovers the next day, and he NEVER eats leftovers. Thanks again for an awesome recipe, next time I want to do it the way you listed it, so will do it the beginning of the week before I’m nearly out of ingredients!

  7. I made this last night and it was amazing!!! Super easy to make and it tastes delicious. I made everything ahead on Saturday night so on Sunday all we had to do was pop it in the oven. My picky 5-year old even gave it a thumbs up!!!!

  9. The rice lasagna noodles I had said not to do anything to prepare them…that they were oven ready…but when I baked the lasagna they pulled away from the top and just got even more crispy. I’ve never made a lasagna…at all…so I asked my mom who said that usually you put some sauce on top. Since this doesn’t have a sauce per se is there something else that you do? or is it just better to find different lasagna noodles so they start out softer? Thanks!

      Liz – Typically, you cook the noodles first. I’ve never tried ones that don’t need cooking.

  10. I am just starting to try and eat clean. I am a single mom, but love the idea of making a casserole to be able to eat all week or freeze. So my question, do you think you could freeze the leftovers?

      Rachel – Sure! The cottage cheese may change a bit when you rewarm it, but it should be fine.

    I was wondering if this could be made with your clean eating Alfredo sauce? I wanted to try but I’m a little leary since the recipe for Alfredo sauce itself is so sensitive. I was thinking of making a chicken Alfredo lasagna with spinach or broccoli.

      Diana – I’m not sure the alfredo sauce would stand up to the extended heat in the oven.

  12. Hi! Planning to make this for dinner tomorrow. A few questions: what size baking dish do you use? 9×13? And could I use a blender to “shred” the broccoli? I see someone asked about using a box grater, but that sounds very messy. Also, are you using the stem of the broccoli or just the head? Sorry for all the questions. This will be my first official attempt at lasagna (one of my hubby’s favorite dishes), and this sounds delicious & I don’t want to screw it up. 🙂

      Jana – Yes, a 9×13 should be about right. But a little bigger or smaller won’t be the end of the world either. Just pick something that fits the lasagna noodles. Yes, you can shred the broccoli that way. Just be careful you don’t end up with broccoli juice! And yes, I grated the stems as well. Let me know how it turns out!

    I was preparing my grocery list to prepare this chicken lasagna, and was wondering where you buy clean cottage cheese? The ones I found in my grocery store( Publix) had a few preservatives.

      Lindsay – I do my shopping at trader joe’s and whole foods. However, it is VERY difficult to find clean cottage cheese. Sometimes, even I can’t find it. The brands I found in the past seem to have disappeared from the store shelves.

  16. Hi, I made this today. Had only 1 lb ground turkey, 500 gram cottage cheese low fat, no cook lasagna, and frozen spinach. Otherwise followed directions making sure lasagna leaves totally covered by meat, spinach, cheeses and store bought tomato sauce. It was delicious!
