I was so thrilled with the way my chicken kabobs turned out for Easter, I thought I’d try another asparagus recipe. I love the stuff. I could eat it every day and never get tired of it.
Today’s recipe was inspired by Whole Foods Market. They had a feature on Asparagus recipes, and it got me to thinking. Since I’m not a huge fan of meat in general, I have to come up with some ways to “disguise” it. And this dish is the perfect way to do it!
Clean Eating Tossed Turkey Asparagus
(Makes 6 servings)
Ingredients
3 tablespoons Dijon mustard
1/2 cup lemon juice
1 cup chicken broth
2 1/2 pounds asparagus, trimmed and cut into chunks
1 1/2 pounds raw turkey breast
1/2 cup finely chopped chives
Directions
Step 1 – Take a nice big bunch of chives and….
Chop them up coarsely.
Step 2 – Take a couple of nice, thick turkey breasts and…
Chop that up too. (Bite size pieces)
Step 3 – Chop up your asparagus as well.
Step 4 – Now, take a large pan and add your chicken broth, lemon juice, mustard and chives. Cook on high for about 3 minutes.
Step 5 – Add your turkey and asparagus to the pan…
…and cook covered for about 10 minutes.
Step 6 – Remove the lid from the pan and let it cook on medium high, until the meat is cooked through and the asparagus is tender.
Note: Do not boil all the sauce down. You want enough left that you can pour some over your turkey and asparagus. The sauce is half the dish!
