Clean Eating Turkey Asparagus

I was so thrilled with the way my chicken kabobs turned out for Easter, I thought I’d try another asparagus recipe. I love the stuff. I could eat it every day and never get tired of it.

Today’s recipe was inspired by Whole Foods Market. They had a feature on Asparagus recipes, and it got me to thinking. Since I’m not a huge fan of meat in general, I have to come up with some ways to “disguise” it. And this dish is the perfect way to do it!

Clean Eating Tossed Turkey Asparagus
(Makes 6 servings)

Ingredients
3 tablespoons Dijon mustard
1/2 cup lemon juice
1 cup chicken broth
2 1/2 pounds asparagus, trimmed and cut into chunks
1 1/2 pounds raw turkey breast
1/2 cup finely chopped chives

Directions

Step 1 – Take a nice big bunch of chives and….Clean Eating Tossed Turkey Asparagus

Chop them up coarsely.

Step 2 – Take a couple of nice, thick turkey breasts and…

Chop that up too. (Bite size pieces)

Step 3 – Chop up your asparagus as well.

Step 4 – Now, take a large pan and add your chicken broth, lemon juice, mustard and chives. Cook on high for about 3 minutes.

Step 5 – Add your turkey and asparagus to the pan…

…and cook covered for about 10 minutes.

Step 6 – Remove the lid from the pan and let it cook on medium high, until the meat is cooked through and the asparagus is tender.

Note: Do not boil all the sauce down. You want enough left that you can pour some over your turkey and asparagus. The sauce is half the dish!

    This recipe looks delicious and I am looking forward to trying it! One thing I was confused about was that the recipe says it makes 4 servings, but the calories are based off of 1/6 of the recipe? Does it actually make 6 servings? Thanks!!
