Clean Eating Summer Recipes

Summer is definitely in full swing in these parts! It registered 102 degrees F. in the shade here today. Lordy, it’s blasted H.O.T.!!! 

In weather like this, it’s sometimes tough to know what to cook. I don’t want to turn on the stove, but standing out in the heat in front of the BBQ is darn near torture. So I have to plan somewhat carefully, and I have a feeling many of you do too.

I tend to cook what needs cooking in the morning, and then I prepare all the cooler/cold stuff just prior to eating it. It’s an odd way to plan a day of cooking, but it works, and that’s what counts in this weather!

I have a ton of yummy summer recipes coming up on my blog, but I wanted to also be sure you don’t miss some of the summer recipes I’ve done in the past.

    We tend to go Mediterranean when it is super hot. Finger foods of hummus, toboule, roasted garlic, red onions, artichoke hearts and pita. Fresh mozzarella (is that clean?) basil and tomatoes – refreshing, fresh, and delish!

    Dinner salads. I roast a chicken or pork for Sunday dinner. Then we have really big salads with some of the meat for protein.
    Like you I try to do most of the cooking in the morning while it’s cool.
    Pasta meals also cook pretty quickly so not too much time over a hot stove.

    Definitely eat a lot more salads in the summer. We also eat a lot of sushi, and we grill a lot. I try to avoid the oven if I can.

    I don’t change my summer dinner meals at all. Soups, curries and chilli stay all summer but what I do incorporate is berries into all desserts. Summer to me means sunshine and berries.
