Clean Eating Spicy Cucumber Cottage Cheese

If you’ve been searching for a new snack idea, try this on for size. I got the idea from my new trainer. She mentioned that I needed more protein in my diet and then suggested cottage cheese and cucumbers.

Frankly, the idea left my stomach feeling just a little unsettled. But never one to turn down professional advice, I had to give it a try.

I put the cottage cheese in the bowl and sliced up my cucumber in cute little bite sized pieces. I put my spoon in for my first bite, lifted it to my mouth, and put it right back down again.

You see, I love cottage cheese, but I’ve never liked it plain. I like it mixed with other things.

Thankful that I spared myself a mouthful of cottage cheese, I began to wonder if I could add anything to make it taste a little better for me. Then I saw the salsa jar.

I’m telling you, this little snack is so yummy, I’ve had it every day since.

Here’s the recipe.

Clean Eating Spicy Cucumber Cottage Cheese

Ingredients
1/2 cup low fat cottage cheese
2 tbsp. salsa
1 mini cucumber

Directions

Simply layer your ingredients and chow down!

If you have little ones, here’s how they can help (With close supervision, of course).

Let the little ones layer the ingredients in the bowl. But choose a non-spicy salsa for the littlest of your gang.

Another savory cottage cheese idea that I love is a faux lasagne–just mix cottage cheese with your favorite clean pasta sauce, add a Tbsp. of lo-fat shredded mozzarella & maybe a tsp. or 2 of shredded parmesan and microwave til hot. Delicious! (Play with the proportions of cottage cheese & sauce based on your liking & how much protein you want from your cottage cheese–I try to do roughly equal servings of each but it is very forgiving:) )

I don’t like cucumbers unless they’re dill pickles. But I love cottage cheese and salsa. Got the idea from my best friend. I also like cottage cheese with a sprinkling of ground flax seeds and chopped pecans. It’s also good with fruit, fresh or canned in fruit juice, any kind you like. There are not many fruits I don’t like, watermelon being the only one I can think of, although there are some exotic ones I’ve not tasted yet.

Cottage cheese is a vastly underrated food.
It should be a staple for everyone. It’s fabulous stuff! (Unless you don’t like it – lol)

try it with peanut butter, a bit of cocoa powder and a little agave nectar or sucanat. really good- it’s like dessert!

Wow – I’m really interested in trying this because I eat cottage cheese with cucumbers almost everyday, but separately. I have the opposite problem that mixing cottage cheese with something doesn’t have the appeal for me. I think I’ll have to try this though especially since I just got some fun new salsas at the farmers market this weekend! I like Jodi’s idea of flax/pecans too!

A grilfriend gave me the idea for a similar snack involving:
- 1/2 cup cottage cheese
- 1/4 (or less, or more) quinoa stirred in
Topped with fruit.

I will have to try the quinoa and cottage cheese topped with salsa and cucumbers!
