These slow cooker barbecue chicken soft tacos are perfect for enjoying the flavors of summer without turning on the barbecue!

Barbecue season is in full swing, but that doesn’t mean you can’t cook inside! It may be hot out there, but there is one little appliance that will get you through cooking dinner without heating up and kitchen, and it’s NOT your barbecue, it’s your slow cooker!!

Just think of everything you can get done while this cooks! Work, laundry, errands, all that fun stuff can be accomplished while dinner cooks itself. Sounds pretty good to me!

And I have to tell you, I LOVED these tacos! Something about bbq sauce in a taco just really nailed it for me. YUM!

These were soft, juicy and absolutely sink-your-teeth-in delicious! But I will warn you, it’s not easy to eat just one. So brace yourself. Filling up with a salad before hand is probably a good idea.

Ingredients

  • 3 lb. raw chicken breasts (boneless, skinless)
  • 1 ⅓ cups clean eating barbecue sauce (see recipe link above)
  • 6 standard whole grain tortillas
  • your favorite toppings (tomatoes, guacamole, onions, etc.)

Instructions

  • Put the chicken and sauce in the slow cooker for 5-7 hours on low or until it easily shreds when stirred. Use to build your tacos.

  5. Hi! Made these overnight – just took chicken out to shred and it had turned dark on the outside and had majorly shrunk down – am I doing something wrong, maybe overcooked? I have never used BBQ sauce in slow cooker before. Shredded and popped back in sauce, we will have for dinner… Ah, my adventures in the kitchen never cease!

    it says 6 large? That seems like a lot. I was thinking 3 large chicken breasts? I slice them
    down the middle and then the 3 large chicken breasts make 6 halves.
    Is this okay?

      Veronica – You can cut the recipe in half if you wish, but be aware of your slow cooker and the cooking time. If the slow cooker isn’t full enough, your meat will become very dry.

  9. Hey there, I am planning to make this recipe but thought I would make my own tortillas. I am not sure what flour I can use though. I usually use the regular flower and just add water and baking powder but I know that flour is not considered clean eating. Can I use coconut flower instead? and will I make them the same just sub coconut flower with the regular flower? I am new to all this so any advice would be greatly appreciated.
