Clean Eating Salmon With Tomatoes And Capers
I love this recipe for it’s simplicity. Just a few ingredients that you throw together without measuring, and you’ve got a really tasty dish.
For those of you focusing on cutting back on salt, here’s a tip: Don’t add any salt until after you’ve cooked this. A little goes a very long way.
Also, stick to sea salt. It’s better for you than other salts and you can use much smaller amounts to achieve the same saltiness you get with other salts.
Clean Eating Salmon With Tomatoes And Capers
Ingredients
Salmon
Tomatoes
Capers
Garlic powder to taste
Salt and pepper to taste
Directions
Preheat over to 350 degrees F.
Step 1 – Using an oil sprayer, coat a large baking dish with a very light spray of olive oil.
Step 2 – Place your fish in the dish and lightly spray the top of that with oil as well. Remember this is a light coat.
Step 3 – Chop up your tomatoes.
Step 4 – Drain your capers.
Step 5 – Top your salmon with the tomatoes and capers.
Step 6 – Top that off with a sprinkle of freshly ground pepper and some garlic powder, and pop it in the oven.
Bake for approximately 20 minutes, or until a meat thermometer reads 135 degrees F.
