Raspberry Coconut Smoothie Recipe

This deliciously refreshing clean eating raspberry coconut smoothie recipe is a fabulous way to start your morning!

Sometimes, life just demands a good smoothie.

Case in point: Mini Chef was being rather insistent on having ice cream after dinner the other night. But I had none in the house, and I certainly was not going to make a trip to the store just for ice cream. No sir! Not even for clean ice cream from the health food store!

So I raided the freezer to see what I could come up with and was pleased to find a forgotten and forlorn bag of frozen raspberries.

So I whipped up this smoothie for him and the only words that came out of his mouth when he was done were,

Yummy Ice Cream!

I rest my case. Sometimes, all you need is some fruit for dessert!

Equipment

  • Blender

Ingredients

  • 15 oz. can light coconut milk (no sugar added)
  • ½ cup frozen raspberries (no sugar added) or 3/4 cup fresh raspberries.
  • 2 tbsp. water (optional)
  • ¼ tsp. ground cinnamon (or to taste)
  • 2 tbsp. honey or maple syrup

Instructions

  • Place all ingredients in a blender and blend until smooth.

    That smoothie sounds delicious! I think I’ll try freezing my coconut milk in an ice cube tray to give it an even thicker consistency.

    What a great attitude you have – we can all only do the best we can! It’s nice to be reminded of that now and then. 🙂

  4. I made the raspberry coconut smoothie today using fresh raspberries (they were on sale). I add ice because I like mine super cold. Very yummy, satisfying and refreshing! I used 1/2 tsp. of cinnamon, and think I’ll cut to 1/4 tsp next time, though. Just my personal preference.

    Good luck!!! I’m inspired by your resolve to become a dietitian!! I’ve been thinking a lot about taking some classes about nutrition and how “food” works (chemically in your body I’m guessing is what I’ll be searching for)….perhaps in the future to become a nutritionalist or something of the sort.

    That looks really good! I’m glad I found your blog. My biggest struggle is that I keep telling myself I’ll worry about it when things settle down. My kids are 13 and 10 and I’m just beginning to see that things probably aren’t going to settle down. lol

      Brooke – LOL!!! Ya, I think it’s fair to say that once kids are in the picture, life is never the same again, and it certainly never settles down. Ever. You just have to put on your big girl pants and do what ya gotta do for you! Because anything you do for you makes you a better mama for your kids.

    Roberta – Actually, light coconut milk is very low in fat. Very creamy too which is why I chose it. Of course, the main reason I went this route is because I can’t have dairy. But I’m sure others here will put your tip to good use! Thanks for sharing! Great idea!

    What is the difference between ‘can’ coconut milk and fresh from the carton (like ‘So Delicious’ brand I love so much)? Is it better/different/processed from a can?

      Dcornelius – It’s been my experience that the canned stuff is clean and the stuff from the carton is not. But that’s just based on the cartons I’ve looked at. There may be a clean carton of coconut milk out there somewhere that I haven’t seen yet. My best suggestion is to read the ingredients and be sure it’s clean. The canned variety just says “coconut milk”. That’s is.

    I absolutely love these recipes ! I’ve done several different varieties of this one. I really love it with strawberries (and banana, sometimes). I started doing these smoothies a few years back, when I had really bad stomach aches during my periods (sorry for the info 😀 ). This was all I could eat in the morning, because everything else felt like tiny stones in my tummy. Nowadays I use this recipe as a weekend treat or a cheat meal. I freeze the leftovers (it makes delicious popsicles!) for hot summer days.

    I just wanted to say, that I really love your blog. You’ve got so many great recipes and ideas to eat clean.
