Clean Eating Pancake Soup Recipe

Warning: I’m about to annihilate the American concept of how a pancake should be served. Brace yourself.

When I was first served this dish in Germany, I thought they surely must be playing some sort of dinner time prank. I was 18, and positive nobody ever ate pancakes with anything other than butter and syrup on them.

Thankfully, I was a brave soul and took my first bite of a dish that has since been one of my favorites.

I found out rather quickly, that many Germans don’t eat their pancakes sweet at all. They eat them served with cheese and vegetables and, you guessed it, in soup!

Just give this soup a chance, and you’ll see why it’s one of my favorites. In fact, every time I make pancakes, I make sure that I make extra just for this soup. It’s a great winter dinner and wonderful for any sickies in the house.

Clean Eating German Pancake Soup
(Makes approximately 10 – 12 cups of soup)

Ingredients

8 cups water or veggie broth or chicken broth
2 cubes vegetable bouillon
1 Tbsp. marjoram
1 cup frozen (or fresh) peas
1 cup frozen (or fresh) broccoli, chopped into very small pieces.
1 batch of pancakes
Salt and pepper to taste

Make your pancakes ahead of time and keep them up to 3 days in a zip lock baggy in the fridge. Be sure you make them thin, like crepes or they will be annoyingly thick and chunky in your soup.

In a large soup pot, combine your broth, vegetable bullion cubes, marjoram, veggies, salt and pepper. Bring to a rapid boil.

While your pot is coming to a boil, prepare your pancakes by cutting them into 1/4 inch strips. Then again, into bite size pieces.

Add 1/2 cup pancake pieces to a bowl and pour 1 cup hot veggies and broth over them.

The best part about this recipe is it’s instant versatility.

If you eat meat and need some protein, make the broth with chicken broth instead of veggie broth and add little bits of chicken to the soup.

If you have a favorite combination of herbs, use them! You can season this soup any way you like to suite your tastes. You can do almost anything to this soup and it will still taste good.
