Chicken And Cucumber Salad Recipe

This simple chicken and cucumber salad can be made in under 10 minutes, is filling, tasty, and great for lunch or a quick dinner.

A while back, I started a section on my blog called “Simple Meals“. My intent was to show you that clean eating meals do not need to be complicated or expensive. In fact, you don’t even need to measure the ingredients! Just add more or less as you like to suit your own tastes. Simple!

I will admit that most of my Simple Meals are usually a result of not having yet been to the grocery store, bare cupboards, and a few odds and ends in the fridge. But if you can’t make a clean eating meal with simple ingredients, what’s the point? Most of us cannot cook all day long, so many of our meals need to be simple for our busy schedules. I do this for a living, and even I’m not immune to the need for occasional convenience. It’s the world we live in. But needing convenience doesn’t mean my eating plan goes by the wayside. It just means my ingredients get simpler. This recipe is a good case in point. I hope you enjoy it.

Ingredients

  • 1 cup shredded chicken (can be canned chicken or shredded rotisserie chicken)
  • 1 cup chopped cucumber
  • 1 cup chopped tomatoes
  • Italian Dressing (to taste – see link above)
  • Fresh, flat leaf parsley (Italian parsley – chopped for garnish)

Instructions

  • Toss as much of each ingredient together as you like in a mixing bowl and serve.
