Clean Eating Fettuccine

Clean Eating FettuccineOh boy was this dish yummy! After I made the Alfredo sauce, my old habits creative juices kicked in, and I got to thinking about all the other wonderful dishes I missed eating at restaurants.

I just couldn’t pass up the chance to try some Chicken Broccoli Fettuccine. I even added some mushrooms! (Sorry, added the broccoli and mushrooms after I took the above photo… oops.)

Here’s how I put it together.

Step 1 – I used my recipe from my last post for Alfredo Sauce.

Step 2 – I cooked some whole wheat fettuccine noodles and broccoli according to package directions.

Step 3 - For the chicken, I put frozen chicken breasts on a parchment lined cookie sheet. I sprayed it with a very light layer of olive oil and topped it off with some garlic powder and pepper (I always add salt after I cook. Never during. You eat less of it that way.)

Step 4 – When the chicken was finished, I shredded it on a plate with two forks and mixed it in. Moist and tender, this chicken was utter perfection.

O.H.   Y.U.M.

Need I say more? I think not.

    Oh sorry! I cooked the chicken at 350 until it reached 170 with a meat thermometer. I never go by time when I cook meat. I’m to worried about eating something undercooked. I would guess about 45 minutes if it’s frozen, but that’s just a guess.

    I alway add cayenne pepper to my alfredo :o ) I like spicy. My favorite meal ever is spicy alfredo wiht whole wheat bowtie pasta, chicken, bell pepper, squash, zuchinni, spinach, and corn. Sometimes we add broccoli bc my roommate LOVES broccoli..and even some mushrooms. the cayenne pepper is what makes it though. DELICIOUS

    Paulissa – For this particular recipe, it does 2 things.
    1) makes the clean up a bit easier.
    2) allows you to use much less oil.
