Well hi there!

My name is Tiffany, and I’m the one that publishes this blog. I create the recipes, I take the photos (about 95% of them), and I type everything that you read here. This blog is my “happy place”. My home away from home, and I warmly welcome you into it.

What it’s all about

If you’re wondering what this blog is all about, it’s pretty simple really. You see, I love to cook, and I love to blog about what I cook. I also love to blog about my weight loss journey and what I’m learning as I progress. So basically, what you’ll find here are lots of recipes (arranged by category and ingredients – notice the “Find Recipe By…” button up at the top there) and some general information about clean eating and losing weight. You can find basic “clean eating 101″ information here.

Who am I?

Well, as I mentioned, my name is Tiffany. I’m a stay-at-home-mama, wife, author, blogger and part-time college student. You can find out more about me here.

Who is Mini Chef?

At the bottom of most of my recipes, you’ll find little notes from Mini Chef. He is my munchkin, and he loves to help me out in the kitchen. He likes to give you tips on how your kids (if you have them) can help YOU in the kitchen! You can find out more about him here.

What is clean eating?

Well frankly, I just cannot imagine cooking any other way! Basically, I cook everything from scratch and I do it with simple, easy to find, whole food ingredients. No packaged garbage with hard-to-pronounce ingredients here! I like to create healthy versions of not-so-healthy dishes, as well as create my own original recipes along the way. What will you get if you subscribe?

I encourage you to subscribe to my blog. It’s completely free and spam-proof. Your email is never used for anything other than sending you the latest updates from my blog. I will NEVER sell your address. Ever. Period.  All you will get in your inbox are notices of the recipes and posts that I publish here on this blog. Even if you decide not to become a clean eater, it can never hurt to have a few healthy recipes at your fingertips, right? Simply scroll up to the box on the right and type in your email address. You can always unsubscribe easily if you find you don’t want updates any longer.

    Hello Tiffany I am new to your site. I am interested in clean eating but I am worried because I for one do not like seafood and although I like roasted turkey, I bought ground turkey breast once to make tacos and it was disgusting to me. When you say “lean ground turkey breast” what are you referring to exactly? I apologize if this question comes off as dumb but I noticed in a recipe your ground turkey looked brown and when I cooked mine it was white. Thank you in advane.

    R2C – I’m not big on seafood either. The seafood section on my blog is the smallest of all my categories!

    Lean ground turkey meat comes in many ways. It sounds like the one you bought was specifically just breast meat. It’s also the most expensive and I can’t afford that with all the turkey meat we eat around here. Generally speaking, the more fat and other turkey parts the meat has in it, the darker it will be and the cheaper it will be. I get mine at Costco, so it’s “regular” turkey meat (whatever that means), but it’s also listed as lean. So I would guess that while it has other turkey parts included, it also has less fat than the regular stuff does.

    Hi Tiffany, I’ve stumbled across your blog while searching for ways to help my spouse. He’s recently been diagnosed at a Type 2 Diabetic and on Friday was told he has Fatty Liver Syndrome and if he doesn’t loose weight and flush the fat from his liver he could have as little as two years to live…..I’ve been looking as your recipes and am wondering if these will be good for him given there is “sugars” and “fat” in the nutrional breakdown. Any assistance you could offer would be greatly appreciated.

    Netmindr – Oh wow. I’m so sorry.

    You know, I want to help you, but it’s so hard for me to give advice here. I’m not a doctor. I have no medical training.

    But I will say this….

    It is CRITICAL that you educate yourself about good nutrition. About what is actually healthy and what is just sold to look healthy. Get to know your ingredients and read every single package you pick up. Not just the percentages, but the actual ingredient lists as well. Avoid all those ingredients you don’t recognize as real food or can’t pronounce.

    The very first thing you should do is talk to a registered dietitian. Your doctor can refer you to one. They can at least give you specifics on the diet he should be following. I would recommend asking your doctor, but dietitians typically know a lot more about nutrition and diet.

    You say you want to cut out sugars and fats. But fruit is sugar and some healthy fats are required for healthy bodily functions. So it’s imperative that you get specifics from a qualified professional. Make a list of questions to take with you and be sure you get every single one answered.

    You should also ask the doctor what type of exercises would be appropriate for him. Few health problems like this are ever solved without exercise. So find out what he’s allowed to do from his doctor.

    You need to find out how much of each nutrient he should/can have on a daily basis. You want to know the specific number of grams he can have per day of sugar, protein, carbs, sodium, everything (basically, everything that is listed on a package label). Make them give you specific numbers and then stick to that like glue. From there, you can decide what recipes and foods are appropriate for him.

    I wish I could give you a more specific answer to your question. But as I said, I have absolutely no medical training (yet), and really cannot begin to know if my recipes would be appropriate for his condition or not.

    Jenn – When you are in another country, you have a wonderful opportunity for clean eating. Ask around for authentic and old recipes. I’d be willing to bet there are some fabulously clean dishes that can be prepared in your kitchen as it is. Outside of that, try a crock pot. Also, many of my recipes are easy to cook in a pot or pan. So you’ll need to sift through them. I’m sorry, I don’t have a section for “non-oven-cooking”. But maybe I should create one!

    Hi Tiffany, I came across your blog yesterday and I’m so excited. I’m new to clean eating and you have so many recipes here I want to try. I have a spaghetti squash I need a recipe for and I noticed you only have one, heres another recipe I found from another site http://eatdrinkbetter.com/2010/11/17/best-ever-vegan-spaghetti-squash-recipe/, I don’t know if/how you can share it. It is sooooo good. I’m a really picky eater so for me to say its good well…. I added some cashew to the recipe (unsalted of course) too. Hats of to Mini Chef too, what a cutie. Looking forward to trying to stay clean .

    I’d just like to make a suggestion regarding your comment that “if you can’t pronounce it, it doesn’t belong in your body.” I realize that your point is to eat foods as close to natural as possible. Just keep in mind that an unfamiliar or unpronounceable ingredient might be something innocuous. Don’t automatically assume it’s “bad”, but look it up. For example, I’m gluten intolerant and many gluten-free foods use xanthan gum. Sounds like a scary chemical, but it isn’t.

    Carrole – Yes, it’s important to know your ingredients. I think for the most part though, people understand the difference between an unpronounceable chemical and basics like xanthan gum. Especially now that veganism and vegetarianism are so big. But I do get your point. Thanks!

    I just found your sight- I have ate clean off and on for several years. I am trying to get back on track- I noticed you had said you can’t have any dairy- I am lactose intolerant-I can eat greek yogart but will pay layer for it…..any other options? I drink almond milk unsweeted- was just wondering- same goes for string cheese.

    Sungirl – I just avoid it all together. When I do get it, I pay for it too. It’s just not worth it to me. I haven’t found anything that replaces yogurt just by itself sadly. But I’ll keep looking!

    Woodsy – thank you so much! I have read about those studies. They are promising. People do not realize how important food is to health. For some reason, the general public just does not seem to make the connection. I’ve seen the difference myself in my own son. His behavior changes dramatically with different foods. He does not have ADD or ADHD, but the difference is very noticeable. So I do believe in that sort of thing whole heartedly.

    I was watching a video on youtube and am thankful that the woman credited the clean diet for her weight loss. She provided the link and I quickly typed it in to see if this was something that was interesting to me. I have never been a make it from scratch kind of gal. Conveinence is my middle name. However my 12 year old daughters eczema is forcing me to read labels and find things that eliminate soy, gluten and diary. Your website was like a breath of fresh air. With a little planning I devised a menu and purchased some of the things you recommeded to get started. I cant wait to make the recipes and look forward to my weight loss journey. I also started doing green smoothies in the morning and to my surprise my daughter really like it. Do you have any recipes for those? Thanks again.

    Brada – Wow! You’re a busy girl! Honestly, you really have three good options here.

    1) use a slow cooker so that dinner cooks while you are gone for the day.
    2) prep freezer meals on the weekends. Make sure you are cooking in big batches so you always have something left over to stick in the freezer in single portions. Making lasagnas you can put in the freezer is good too. Prep on the weekends. It’s the only way.
    3) If you can, exercise while the kids are at their activities. I don’t know what your schedule is like, but if there is a time in your day when all the kids are at scheduled activities, that’s the best time to work out.

    And as far as switching your family over goes, I wouldn’t even mention it. Just start with a few meals a week as you mentioned and see if anybody notices. If it’s just another meal, they won’t fight the change so much. They will only protest if you make a big deal out of it. That’s been my experience anyway.

    Hi Tiffany…i stumbled across your website while looking up clean living, on the advice of a friend. I was found to be wheat/gluten and dairy sensitive (allergic) a year and a half ago. My hubby is lactose intolerant, and we have 4 kids between 10 and 16 years old. Our food tastes vary widely, so the idea of switching us all over to this sounds daunting and overwhelming. I love your website though. It has fabulous information! I will work at slowly incorporating your ideas and recipes as I’m able, because I totally believe we’d all be much healthier for doing it.     Asia – I know it sounds awful, but I have found that the best way to switch family over is to not tell them you are doing it. Just start cooking clean and don’t mention the difference. 9 times out of 10, they won’t even notice which makes the transition much easier. Then after a few months, ask them how they like their new lifestyle.

    I have read that you were in Germany, that is where I am now. Can you give me tips on finding some clean eating ingredients that aren’t common at the commissary? Such as whole wheat pastry flour, chia seeds and the such. I know fresh fruits, veggies and meats are easy to find in Europe but some of the other things confuse me lol!
